Salads are fabulous at the moment, very appealing, which makes healthful eating a pleasure; and achieving one of my New Year goals much easier!
I made an omelette to have with this salad – light, very tasty and satisfying.
Whisk 3 eggs in a bowl, add a little salt and black pepper. Melt 2 teaspoons butter in a frying pan over a medium heat and spread around the pan. Pour in the egg mix and swirl to cover the pan. Cover with a lid and leave until the egg has set. Fold in half and serve…or sprinkle over a filling, fold in half and heat for approx 1 minute, then serve and enjoy!
I added some grated strong Cheddar. The flavours of the melted butter and Cheddar together created a taste-explosion. Bubbles on omelette = hot, melted butter…lick the screen and you can taste it – ha! 😉
A right royal mess was made slicing this! But eating it was sweet and satisfying.
