In the form of roasted sweet potatoes.  Wedge or cube the sweet potatoes, massage in some oil(I used EVOO) with salt & pepper, and spread out on a baking sheet.

Roast at 180*C(fan) for 30 minutes.  Enjoy!

These are so good – sweet and savoury together.  If I use only salt & pepper as seasoning then I eat them with a dollop of mayo and/or a good splodge of sweet chilli dipping sauce on the side.

This occasion, I added in some Caribbean seasoning – it was spicy and good!  Only needed a little mayo on the side.  There’s no brand as we purchased the loose spice at a market in Gloucester – my Beloved thinks they’re fab, and we made the trip, especially for the purchase(with other spices) recently!  White potatoes would work just as well if you’re not into the sweet potatoes.  But go on, try them…. 😉

  1. I made sweet potatoes like this all the time. I think they’re delicious with just a little dash of chipotle or cayenne pepper.
