Garlic Butter Chicken

Garlic and butter spread on chicken = deliciousness!  I’ve been making this dish for years.  It’s simple, tasty and just another way of fancying up some chicken.

Chop some garlic, then crush it in a pestle & mortar(or deal with it as you will).

Add 1 tsp butter per chicken breast + 1tsp, and a grinding of fresh black pepper, and smoosh in to a paste.

Divide the garlic butter between the chicken breasts, and press on top(and try to stop any garlic lumps from escaping!). Pop in to a baking dish.

Bake in the oven – 200*C(I like to know that chicken is well-cooked) – for 30 minutes.  Serve, spooning some of the melted butter over the top of the chicken.

This is what I did with mine:

Roast potatoes…roasted carrots…garlicky greens(separate post about those)…and a good dollop of sweet chilli sauce on the side.  My, that plate was full of garlicky goodness!  And was good with a glass of red 🙂
