A simple snack or breakfast without all the fuss of making cheesecake:

A slice of bread with a spread of soft cheese(I used Philadelphia) and a spoon of your favourite jam = cheesecake 🙂  I used raspberry jam because I love anything raspberry, so in my book that makes raspberry cheesecake!  The variations can be endless.

I just ate this – it was cold and creamy and delicious.  Not too sweet, full of raspberry flavour. Satisfying. And so simple!
